Arctic food security: Traditional nutrition and Arctic food
This program consists of:
- lectures on traditions in human nutrition in the North and the technology of production of national food products;
- training seminars on nutrition culture and traditions in the North; national cuisine and the peculiarities of cooking dishes of the peoples of the North; innovative technologies for creating food products based on the traditional knowledge of the peoples of the North using unique northern raw materials of animal and vegetable origin; literature search, preparation and defence of the final work;
- practical exercises using modern information technologies and virtual reality (virtual tours of museums, libraries, catering establishments with various national cuisines)
